Autumn Fruit Soup
5 ripe pears
4 Macintosh apples
¾ cup organic raisins
1-tsp. fresh ground cinnamon
Juice of 2 lemons
1-tsp. fresh ground vanilla bean
Organic unsweetened soymilk (we use Westsoy)
Chop and core fresh fruit leave skins on if organic. Divide
ingredients in half and puree in blender until smooth. Heat and
serve

Magical Mushroom
& Seitan Stroganoff
1 LB cooked organic rice pasta
1 ¼ cup sliced fresh shiitake mushrooms
2 cups organic seitan (wheat protein we use Ray's)
1 LB organic tofu
1 cup brewed organic decaffeinated green tea
1-2 cups unsweetened organic soymilk
2 cups thinly sliced shallots sautéed in water or white wine
2 TB chopped fresh garlic, sautéed as above
4 TB organic high lignan flax oil (we use Spectrum Naturals)
¼ tsp. each dried or 1 tsp. each fresh rosemary, tyme, basil and
tarragon
Salt and white pepper to taste.
Puree tofu with soymilk to desired sauce consistency Add onions and
garlic heat on low until just simmering. Add mushrooms, pasta and
spices. Toss with flax oil. Serve over mixed baby greens topped with
fresh veggies.

Rainbow Symphony Salad with Creamy Avocado Dressing
Juice of 2 limes
½ cup organic white balsamic vinegar
¼ cup high omega 3 oil like flax or hemp or HDL enhancing grapeseed
oil.
2 ripe avocado
1 TB chopped basil
Organic unsweetened soy milk
Puree all ingredients until smooth with enough soy milk to create
desired consistancy.

Agave Mustard Salad
Dressing
1/2 cup mustard
1/2 cup organic tofu
1 TB fresh basil
Agave to taste
Pepper to taste
Organic unsweetened soymilk to desired consistency
Puree in blender until smooth

Chuckwagon Chili
32 oz crushed tomatoes
2 cups (16oz) cooked or canned black and or red beans
1 cup chopped onion
3 cloves minced garlic
¾ cup organic TVP (textured vegetable protein)
3 TB chili powder
3 TB chopped fresh Basil
2 Tsp. chopped fresh cilantro
Salt & pepper to taste
Add all ingredients to large pot or crock-pot. Add water to desired
consistency. Cook until onions are tender.

Mock Guac
16 oz cooked chickpeas
1 cup packed fresh baby spinach
Juice of one fresh lime
1 tsp. chopped fresh cilantro
2 cloves fresh garlic
Salt and pepper to taste
1/3 cup chopped red onion
Unsweetened soy milk
Chopped scallions
Puree all ingredients except onion with enough soymilk to desired
consistency.
Stir in red onion and top with scallions.

Kind Philly Cheese
Steak Sandwich
3 cups shredded organic seitan (also
called wheat meat or wheat gluten)
1 cup well grilled Vidalia onions
4 cloves minced sautéed garlic
¾ cup shredded organic soy "cheese"
4 organic multi-grain rolls
Braise seitan until
browned, mix with grilled onions and garlic and soy cheese.
Divide between rolls and serve hot

Baked Sweet Potato
"Fries"
Boil sweet potatoes until soft then
cool completely in refrigerator.
Slice into wedges.
Grill in nonstick pan on medium high heat until browned.
Season with salt and pepper as desired.
